Welcome to May's  edition of  SECOND FRIDAY RECIPE. On the second Friday of each month, I've invited a fellow author to share a favorite recipe with us and maybe a little something about their latest book. This week I'm so pleased to welcome my critique partner and writing bestie Robin Patchen to the blog. She's here to share a family favorite recipe as well as her debut print novel.

Chicken & Bowtie Pasta Salad

Chicken & Bowtie Pasta Salad

1 lb. boneless, skinless chicken breast, grilled
12 oz. bowtie pasta, cooked according to package directions
1 c. grated Parmesan
1 c. chopped pecans or walnuts
1 c. chopped sundried tomatoes
½ c. extra virgin olive oil
¼ cup balsamic vinegar
1 tsp. dried basil

Mix olive oil, vinegar, and basil in a jar or cruet and shake well.
Chop grilled chicken into bite-sized pieces. Stir grilled chicken, drained pasta, cheese, nuts, and tomatoes in a large bowl. Toss with balsamic dressing and serve.
True confessions: I dislike sundried tomatoes, and my family doesn’t like the nuts, so we omit both of those. It’s still delicious.
