SECOND FRIDAY RECIPES

Welcome to the new blog format. Last week was GETTING TO KNOW YOU FRIDAY. This week, and every second Friday of the month, will be our SECOND FRIDAY RECIPES. I'm collecting some great recipes from terrific authors, but first I wanted to share one of my all time favorite cakes with you.


KEY LIME CAKE
INGREDIENTS:
1 Box lemon cake mix
1 3oz box of lime jello
1/3 Cup oil
3 eggs
½ Cup orange juice
¾ Cup water
1 Box powdered sugar
¼ C bottled Key lime juice
¼ C fresh squeezed Key lime juice
8 oz softened cream cheese
1 stick softened margarine
1 tsp. Vanilla
INSTRUCTIONS:
1. Prepare three 9 inch round pans by lining the bottom with wax paper.
2. Spray sides and paper with baking PAM.
3. Mix the cake mix, lime jello, oil, eggs, orange juice and water together for 2-3 minutes on med. Speed.
4. Pour an equal amount of the batter into each of the three pans.
5. Bake at 350 degrees for 25 minutes.
6. GLAZE INSTRUCTIONS
7. Squeeze enough key limes to get ¼ Cup.
8. Pour ¼ Cup bottled key lime juice into the fresh squeezed.
9. Mix in 4 Tablespoons powdered sugar.
10. When the cakes come out of the oven, while they are still warm, use a spoon to drizzle glaze over the entire surface of each layer.
11. ICING INSTRUCTIONS
12. Mix the margarine and cream cheese together.
13. Mix in the remainder of the box of powdered sugar.
14. Add the vanilla, and mix until smooth.
15. Remove the first cake, peel away wax paper, and spread a layer of icing, repeat with second cake.
16. Top with last cake and ice completely.
17. Place the cake in the fridge to keep the icing firm

I know it looks like a lot of steps, but the cake is so moist, with just the right combination of sweet and sour...Trust me, you won't have to worry about left overs!!
